Key Responsibilities
- Supervise daily stewarding operations for all F&B outlets and banquet functions
- Ensure proper cleaning, sanitizing, and storage of kitchen equipment, crockery, cutlery, and glassware
- Maintain cleanliness of kitchens, cold rooms, stores, and waste disposal areas
- Monitor and control chemical usage according to safety standards
- Ensure compliance with Dubai Municipality hygiene and HACCP regulations
- Prepare stewarding duty rosters and allocate tasks effectively
- Train and coach stewards on hygiene, safety, and operational procedures
- Conduct regular inspections of back-of-house areas
- Manage inventory of cleaning supplies and raise purchase requisitions when needed
- Coordinate with Executive Chef and outlet managers during events and peak periods
- Ensure proper waste segregation and recycling procedures
- Report maintenance and equipment issues promptly
