Job Location : Dubai, UAE

Key Responsibilities:

• Prepare and present sushi and sashimi dishes according to recipes, quality, and presentation standards.
• Ensure all ingredients, including fish, seafood, and garnishes, are fresh, properly stored, and handled safely.
• Assist in menu planning, daily specials, and portion control.
• Maintain hygiene and cleanliness of workstations, tools, and equipment at all times.
• Monitor inventory levels and report shortages or spoilage to the Sous Chef/Head Chef.
• Train and guide junior kitchen staff on sushi preparation and presentation standards.
• Follow health and safety regulations, including proper food handling, storage, and sanitation practices.
• Collaborate with the kitchen team to ensure timely and efficient service during operating hours.

Requirements & Skills:

• Proven experience as a Sushi Chef or Chef de Partie in a high-volume, high-quality restaurant environment.
• Strong knowledge of Japanese cuisine, sushi techniques, and ingredients.
• Excellent knife skills and attention to detail.
• Ability to work under pressure and meet tight deadlines.
• Understanding of food safety, hygiene standards, and proper kitchen practices.
• Strong communication and teamwork skills.
• Flexibility to work shifts, weekends, and public holidays as required.

Qualifications:

• Culinary degree or equivalent professional experience in Japanese cuisine preferred.
• Minimum 4 years of experience in sushi preparation and Japanese kitchen operations.
• Consistently deliver sushi dishes that meet or exceed guest expectations in taste, quality, and presentation.
• Contribute to maintaining a professional, organized, and safe kitchen environment.
• Demonstrate initiative, reliability, and adherence to company standards.
